The most basic version of the dish combines noodles with a savory, spicy sauce made from chili oil, Sichuan peppercorns, sesame or peanut paste, and sometimes minced meat. I love Dan Dan noodles and I had been looking for a good Dan Dan sauce for ages, so I could make Dan Dan noodles at home. I was therefore excited when I discovered the Dan Dan Sauce from Chinese Laundry. The sauce is one of the best Dan Dan sauces I’ve ever tried and it’s ready to use, straight out of the jar. With a jar of Dan-Dan sauce in your kitchen arsenal, you’re never more than 10 minutes away from a delicious meal. This recipe is for the meatless, straight-out-of-the-jar version, but you can add minced pork or beef (fried until slightly crispy) if you wish.
I’m using the Dan Dan Sauce from Chinese Laundry. It has just the right amount of heat to it, and it’s made with good, clean ingredients. It’s one of the best ready-made Dan-Dan sauces I’ve tried, on par with what you’ll find at good Chinese restaurants.

Ingredients
3 tablespoons Dan Dan Sauce
1 serving Medium-sized round wheat noodles (Alternative: flat noodles, knife-cut noodles, rice noodles, or pasta)
1-2 cloves garlic, chopped finely.
2 tablespoons chopped cilantro
1 tablespoon chopped scallions or green onions
1 tablespoon roasted, chopped peanuts
Directions
- Boil a pot of water and cook your chosen noodles according to the package instructions or until they are al dente.
Once done, drain the noodles and set aside. - Stir the Dan Dan Sauce well, so all the ingredients are mixed together. Mix Dan Dan Sauce and chopped garlic with the noodles, based on your spice preference and how many noodles you’ve cooked. Start with 1 tablespoon and gradually add more to get the noodle-sauce ratio just right. Toss the noodles with the sauce, ensuring an even coat.
- Transfer to a serving bowl and sprinkle with scallions, chopped peanuts and cilantro.
