Recipe: 5-minute Smoothie Bowl with Bilberry Powder and Banana

Smoothie bowls were huge on Instagram and Pinterest in 2016, but I’m a bit slow you know, so it’s only recently that I’ve picked up the trend. As the name suggests, smoothie bowls are bowls with smoothie, decorated with different kinds of toppings.

The smoothie base typically has yogurt in it to make it thick and creamy. Be careful not to add too much liquid, or it will be too runny and the topping will sink to the bottom of the bowl. My recipe is made with bilberry powder from the Finnish brand Bilberry.ae to give it the nice light purple color. The bilberry powder is easy to store, and it’s cheaper than buying fresh berries. You get all the healthy stuff from the bilberries, which are a kind of wild blueberries which grow in the Finnish forests. They are different from the blueberries you’ll find in most supermarkets as they are purple inside and out. To decorate my bowl, I used edible flowers, cocoa nibs, pecans and fresh berries, but you can pick the topping you prefer.


Smoothie base:

1 frozen, sliced banana

0.5 dl red berry juice

4 tbsp. Greek yogurt

1 sachet Berryfect Bilberry Powder from Bilberry.ae


The banana needs to be frozen because it makes the smoothie thicker. Furthermore, the smoothie tastes best ice cold.

If you use low-fat yogurt or other kinds of runny yogurt, you’ll only need to add very little berry juice, or the smoothie will be too runny. If that happens, add more banana or any other kind of frozen fruit you have available along with more yogurt.
