The Coconut Lemongrass Curry Saucy Noodles were developed in collaboration with Chaht Suansilphong + Dustin Everett from Fish Cheeks, which is one of my favorite Thai restaurants in New York City. The noodles takes inspiration from Khao Soi, a rich and flavorful coconut curry noodle soup from the northern part of Thailand.
The noodles are air-dried, and will be ready in 4 minutes. Mix with the sauce, sprinkle with fresh lime juice and cilantro if available, and you have a delicious, satisfying meal ready in no time.
Mitzie Mee – Sanne: I love how perfectly bouncy the noodles are. They don’t taste like any other instant noodles out there. The sauce is also delicious. The noodles are good on their own, just with the sauce, but you can add chicken or shrimp for a more filling dish. The Coconut Lemongrass Curry Saucy Noodles are a bit spicy. Not as spicy as the Chili Sesame Saucy Noodles, and I like the level of heat, but if you’re not into spicy food, this one isn’t for you.

Omsom was founded by the two sisters Vanessa and Kim Pham. They are daughters of Vietnamese refugees and grew up watching their mom cook dinners from scratch.
