The bright yellow banana juice with honey is one of the most popular drinks at Borderline Collective’s Tea Garden restaurant. It is easy to make, and it tastes amazing, like sunshine in a jar.

Recipe and notes by Chef Nge Nge: The bananas here in Thailand are smaller and sweeter than in Europe and the US, but you can use any kind of sweet banana for the recipe.

The secret is to boil the bananas as it will bring out the sweetness and the banana flavor. If you don’t have time to boil the bananas, make sure you use very ripe bananas (the kind that has gone brown on the outside, and that you would otherwise use for banana bread.

If you like peanut butter (I do!) the banana juice gets even better, if you add a tablespoon of peanut butter before mixing.

Ingredients

  • 1-2 ripe bananas

  • 1/4 cup honey

  • juice from 2 limes

  • A pinch of salt

  • (a pinch of sugar if you want sweeter flavor)

  • 2 cups water

  • ice

Directions

  • Boil the bananas until they’re soft. It will typically take around 10 minutes.
  • Scoop out the cooked banana and place it in a blender.
  • Add honey, salt, lime juice, ice (and sugar). Blend for 15-20 seconds.
  • Serve in 1 big glass with a refill, or two small glasses.

Borderline Collective is located in Mae Sot, which is about the closest you get to Myanmar, while still being on the Thai side of the border. The shop/restaurant/art gallery/creative space was started with the purpose of supporting migrant and refugee women from Myanmar, by helping the women sell their handmade products. The women are organized in smaller, autonomous, collectives based in the small villages along the border, and Borderline Collective provides a space for the women to showcase their products, and thus reach a larger customer base.
