The Cardamom Croissant at Hart Bageri is one of the best pastries I’ve ever had. The outside is crispy and caramelized and the inside is buttery and soft. After the Cardamom Croissant has been baked, it is dipped in browned Danish butter and cardamom sugar. It’s not too sweet, and the cardamom provides a really nice twist. When I was there, I was lucky and got one which had just been pulled out of the oven, so it was still warm, yum!

The Cardamom Croissant at Hart is not a typical croissant. If you ask me, it’s more like a mix of a Danish cinnamon bun and a croissant. Some might also say that it resembles a French kouignette (the individual cupcake-sized version of the Kouign-amann) in terms of texture and flavor, but don’t overthink it, just enjoy what might be your new favorite pastry.

About Hart Bakery

Hart Bageri (Hart Bakery) is a popular bakery in Copenhagen, known for artisanal bread and pastries. The bakery was founded by British baker Richard Hart in 2018, and before opening his own bakery, he was a baker at the acclaimed Danish restaurant Noma.

When he opened Hart Bageri in Copenhagen in 2018, the focus was initially on creating high-quality sourdough bread, which quickly became a staple of the bakery and gained a loyal fan-base. The cardamom croissant followed as Hart Bageri expanded its offerings and today, the bakery has established a reputation for both bread and pastries.

The original branch of Hart Bageri is located on Gl. Kongevej in Frederiksberg, but I like the Holmen location better, especially when the weather is nice and you can sit outside and enjoy your pastry.
