Recipe: Sugar cones with Eton Mess

Eton Mess is a classic British dessert made with whipped cream, strawberries, and meringue. It’s simple and a little messy, but the combination just works.

Here, I’ve spooned it into small sugar cones instead of serving it in a bowl. I’m using ready-made, store-bought cones and meringues, so it’s quick to put together and done in about 10 minutes. If you feel like it, you can make your own cones and meringues.

You can swap the strawberries for other berries if you like.

Recipe: Sugar cones with Eton Mess

Ingredients

  • 1 cup heavy cream

  • 10-15 strawberries

  • 10 meringues

  • 10 small sugar cones

Directions

  • Whip the cream to soft peaks and keep it chilled while you prepare the rest.
  • Lightly crush the strawberries with a fork, keeping some larger pieces.
  • Break the meringues into smaller pieces.
  • Fold strawberries and meringues into the whipped cream. Don’t overmix, it should still look a bit uneven.
  • Spoon the mixture into the cones and top with sliced strawberries.
  • Serve right away. The cones will soften quickly once filled.
