Kampot pepper is an exclusive variety grown in Kampot Province in southern Cambodia. Known for its complex flavor and beautiful color, it is celebrated by chefs and food lovers around the world.

How Kampot Pepper Is Made

Kampot pepper is grown on small family farms in Kampot Province, where the warm, humid climate creates ideal growing conditions. The peppercorns are harvested by hand when ripe, then dried and carefully sorted before packing. The process is time consuming and very labor intensive, which is one of the reasons Kampot pepper is among the most expensive peppers in the world.

The Different Varieties of Kampot Pepper

Kampot pepper comes in several varieties that differ in flavor, aroma, and color. The three most common are black, red, and white Kampot pepper.

Black Kampot pepper is the most widely used variety. It has a bold peppery flavor with notes of wood and eucalyptus. It works especially well with red meat and game, but it is versatile enough to use in most savory dishes.

Red Kampot pepper has a deep, complex flavor that is both spicy and fruity. It is known for its intense aroma with hints of spice, wood, and citrus. Red Kampot pepper works beautifully with meat, fish, vegetables, soups, and sauces, and it is also surprisingly good in desserts and cocktails.

White Kampot pepper comes from the same fully ripe peppercorns as red Kampot pepper, but the outer skin is removed before drying. This results in a more delicate flavor and aroma. White pepper is ideal for lighter dishes such as fish and seafood, and it does not darken the food the way black pepper can. White Kampot pepper is often considered one of the most refined and elegant peppers in the world.

How to Use the Different Varieties

Which type of Kampot pepper to use depends on what you are cooking. Black Kampot pepper is an all purpose choice that works in most dishes. White Kampot pepper is best for lighter dishes like fish and seafood. Red Kampot pepper is perfect when you want a deeper flavor and a bit more visual impact.

I also love a light sprinkle of Kampot pepper on strawberries, pineapple, or other tropical fruits, and mixed into the salt rim of a good margarita.
