French toast is a great way to make use of stale bread, and it tastes divine served with bacon, syrup, and butter. The combination of sweet and savory flavors is delicious, and perfect for a weekend brunch or any other time you want to treat yourself.
Still not convinced that bacon and French toast is a good idea? Promise me you’d at least give it a try. If it’s not for you, you can also serve the French toast sprinkled with powdered sugar, and with fresh berries as a topping.
I’ve tried to keep this recipe as simple as possible, and to only use ingredients that you probably already have in your pantry, but if you want to level up your French toast, use brioche bread, add a bit of real vanilla, and maybe some nutmeg and some cardamom to the recipe.

You can use all sorts of white bread to make French toast, spanning from rich, buttery brioche to regular white toast bread.
Ideally, French toast is made with bread that is a couple of days old. Stale bread absorbs the egg mixture better without becoming too soggy, which helps achieve that perfect custard-like interior without becoming overly soft or mushy. Aim for the slices to be around 1” thick.
This recipe is less sweet than most recipes out there. It has a bit of sugar to make sure you get some caramelizing going on when frying, but it’s not too sweet. If you prefer a sweeter French toast, you can add one more tablespoon of sugar.

Ingredients
8 strips bacon
4 thick slices white bread
3 eggs
1 tablespoon sugar
A tiny pinch of salt
1 teaspoon vanilla sugar or vanilla extract
1 teaspoon ground cinnamon
1 cup whole milk
butter for frying and serving
syrup for serving
Directions
- Cook the bacon
- Preheat a skillet over medium heat. Cook the bacon strips until crispy, about 6-8 minutes, turning occasionally. Transfer the bacon to a paper towel-lined plate to drain excess fat. Set aside.
- Prepare the Egg Mixture
- In a large mixing bowl, whisk together the eggs, sugar, salt, ground cinnamon, and vanilla sugar/vanilla extract until well combined.
- Whisk in the milk.
- Soak the bread and cook the French toast
- Place the slices of white bread in the egg mixture, allowing each slice to soak thoroughly.
- Preheat a large skillet or griddle over medium heat. Add butter to the pan and allow it to melt, swirling to coat the surface.
- Place the soaked bread slices onto the skillet. Cook for about 2-3 minutes on each side, or until the bread is golden brown and cooked through. Adjust the heat as needed to avoid burning.
- Serve the French toast warm, topped with crispy bacon strips, butter, and syrup.
