Seminyak: SugarSand - Borderless Dining by the Beach

SugarSand is located right by the beach in Seminyak, and the restaurant’s concept is Borderless Dining, with dishes inspired by different parts of the world.

Normally, that would set off alarm bells for me. Too often, you end up with “international food” that tries to be everything to everyone and doesn’t quite excel at anything. SugarSand turned out to be something completely different. The menu is full of interesting dishes, and while the inspiration comes from different parts of the world, everything feels thoughtfully put together and respectful of where the dishes come from.

We started with the Raw Fish of the Day, which was hamachi. The fish was served raw in a citrus marinade, crudo-style. Really good.

We also ordered the bone marrow, which was served with crispy pieces of brioche and a smoked koji cream. Burnt seasoned leeks and Parmesan added both depth and a salty contrast to the rich marrow. Everything worked well together. The soft, buttery marrow, the crisp brioche, and the different toppings made the dish much more interesting than the classic version with just bread and marrow.

When it was time for the main courses, we came very close to ordering the Moroccan Chicken. The staff spoke highly of the dish, which came with a tagine sauce, saj bread, and crispy fried vegetables. It sounded like the perfect comfort food after a day at the beach.

In the end, though, we ordered the Sri Lankan Fish Curry instead, and that was definitely not a bad decision. A really delicious curry with a large piece of red snapper, served with raita and lemon on the side.

Our other main course was the Grilled Papuan Prawns. Large, juicy prawns topped with a really flavorful sauce that added plenty of flavor without overpowering the prawns themselves. They were served on a bed of fregola, a type of pasta from Sardinia. Fregola is a little like oversized couscous, but with a firmer texture and a slightly nutty flavor. A great match for the prawns.

We were pretty full after the main courses, but when we spotted the Negara chocolate dessert on the menu, we quickly agreed that we could make room for that one. Negara is located in western Bali and is known for its cacao.

The dessert consisted of a soft marshmallow with what I think was a raspberry filling, along with different chocolate elements. A beautiful dessert and a very nice way to end the meal.
