Recipe: Not-so-ugly-oatmeal with almond milk, fresh figs, and walnuts

Oatmeal with almond milk, fresh figs and walnuts, Recipe

Oatmeal is one of my go-to breakfast choices on weekdays. Especially during the cooler months, it’s nice to have something warm for breakfast, and I like how satisfying a bowl of oatmeal can be, keeping me going from the early morning hours and all the way to lunchtime.

While a plain bowl of oatmeal may lack the visual allure of other breakfast options (hey avo toast, stop being such a show-off), you can dress it up with fresh fruit, berries, and nuts, and make it just as appealing to the eye, as it is to the palate.

Notes

This particular recipe calls for almond milk, but you can use any kind of milk you prefer. It doesn’t take more than 10 minutes to make, so it’s a quick and easy way to start your day.

Here’s my favorite oatmeal topping:
Fresh figs, walnuts, honey, banana and cacao nibs. Drizzle a little honey on top and your oatmeal is ready to eat.

Another nice topping:
Sliced apple, cinnamon, and honey.

Ingredients

  • ½ cup (1.25dL) water

  • ½ cup (1.25dL) almond milk

  • ½ cup (1.25dL) rolled oats, without additives (not the instant ones)

  • 1 teaspoon honey

  • A pinch of salt

  • ½ banana

  • 1 fresh fig

  • Walnuts

  • Cocoa nibs

Directions

  • If you ask my mom, she would tell you that you should only add water and let the oats simmer for a couple of minutes before adding the rest of the ingredients, and that’s probably the right way to do it, but I would just add everything at once. Bring it to a boil and let it simmer for a couple of minutes until you get the right, thick texture.
  • Add your favorite topping, and enjoy your oatmeal breakfast. Here is my favorite topping:
Fresh figs, walnuts, honey, banana and cacao nibs.
This topping combo always works, but sliced apple and cinnamon is also great with oatmeal. Drizzle a little honey on top and your oatmeal is ready to eat.

Ninja Air Fryer
$105.99

I’ve had really good experiences with the Ninja air fryers. They're easy to use, the quality feels solid, and the results are consistently great. I’ve had really good experiences with the Ninja air fryers. They’re easy to use, the quality feels solid, and the results are consistently great. I like that you don’t have to fuss around with settings to get good food out of it. Vegetables turn out crisp without drying out, and chicken comes out juicy with a nice golden crust. It’s one of those kitchen gadgets that actually lives up to the hype and ends up being used all the time.

Caraway Nonstick Ceramic Frying Pan (2.7 qt, 10.5")
$115.00

Caraway recently launched on Amazon, and their cookware is as pretty as it is practical. The Caraway 10.5" Nonstick Ceramic Frying Pan is one of those pieces you’ll find yourself reaching for all the time, whether it’s for eggs, sautéed veggies, or pancakes on the weekend. I especially love it in Perracotta, which adds such a nice pop of color in the kitchen.

The naturally non-stick surface means you can cook with less oil or butter, and cleanup is quick with just a wipe or light wash. Like all of Caraway’s cookware, the pan is free from PTFE, PFOA, PFAS, lead, and cadmium, so you don’t have to worry about toxins sneaking into your food.

It works on all stovetops, gas, electric, and induction, and it’s oven-safe up to 550ºF, which makes it super versatile. Durable, easy to use, and so good-looking, this is a pan that really makes everyday cooking feel a little more special.
