Denmark: Lunch at Madrick in Vejle

Vejle: Lunch at Madrick

Madrick is a really cozy spot down by Paraplyerne (the Umbrellas) in Vejle. At lunch, the concept is simple and fun. You build your own plate by ticking off three small dishes on a little card from the menu.

I went with Christiansøpigens Sild, shrimp, and cold-smoked salmon. It was a great combination, and everything tasted delicious. Christiansøpigens Sild is a classic type of marinated herring in Denmark. It’s usually served with toppings like egg salad, onions, and herbs. It’s simple, but when it’s done right, it’s one of my absolute lunch favorites.

You can also order a full-size stjerneskud, which is the classic Danish open-faced fish sandwich. At Madrick, it comes fully loaded with hand-peeled shrimp and cold-smoked salmon, and it’s both bigger and tastier than most versions you’ll find. Trine had it and was very happy with her choice.

Madrick is also open in the evening, where they switch to a fixed menu, so you can just sit back and let the kitchen take care of everything.

The restaurant is located by Paraplyerne, the colorful canopy of umbrellas strung across the street. It might not have started in Vejle, but this is where I first came across it, and it still feels a little special every time I walk through. I really love the atmosphere here.

Mitzie Mee - Sanne

Welcome to my blog about The Heart of Jutland. I grew up in a small village just outside Fredericia, so this part of Denmark has always had a special place in my heart. Even after many years of traveling around the world, this is still where I feel at home. Fredericia is the city where I spent most of my childhood, and it is also the place I think of as home when people ask where I’m from. Later in life I worked at the hospital in nearby Kolding, and for several years I flew out of Billund Airport as cabin crew. Through work, family, and everyday life, I have therefore spent a lot of time in this area and had plenty of opportunities to explore the towns, the countryside, and the coastline. There is truly a lot to experience here. Historic towns, beautiful nature, great restaurants, and plenty of things to see and do. It is also one of the easiest parts of Denmark to visit, whether you are flying into Billund or traveling through Jutland. Here on the blog I share my favorites from the Heart of Jutland. The restaurants I keep coming back to, cafés that are worth a stop, and the places and experiences I would recommend if you want to discover some of the best that the Heart of Jutland has to offer.
