Tokyo: Soufflé pancakes at Burn Side St Cafe
Crepes have been all the rage for quite a while, but these days, the absolute must-eat in Tokyo is the super fluffy soufflé pancakes, and one of the places to get them is at Burn Side St Cafe. So even though it was raining and there was a long line outside, this was where I went, after I was done browsing the shops in Harajuku. I think I waited for almost an hour to get a table. Not sure about the exact waiting time, but it was long enough for me to consider leaving, because I hate waiting, even if it’s for pancakes.
Luckily, I stayed because soufflé pancakes are definitely something that shouldn’t be missed. I had the original White Soufflé Pancakes and they were super delicious. I sometimes find ordinary pancakes a bit too heavy and doughy, but the soufflé pancakes are much lighter. The exquisite, fluffy texture comes from adding plenty of meringue and ricotta to the dough, but don’t ask me how they put their logo on the top of the pancakes.
The tiny café is one of those places, where you want to hang out forever, but considering the long line outside, this probably wouldn’t be a good idea, so when I had finished the pancakes, I tried not to linger too long over my coffee.
